Ginataang Puso ng Saging with Tofu

Ginataang puso ng saging with tofu is a meat-free ulam with a creamy coconut sauce and a pleasantly firm bite. Banana blossom needs a little preparation to tame its sap and astringency, but the cooking itself is straightforward. Pan-seared tofu adds protein and keeps the dish satisfying with rice.

Ingredients

  • 1 medium banana blossom, about 500 to 600 g before trimming
  • 300 g firm tofu, drained and cut into 2 cm cubes
  • 1 1/2 cups coconut milk
  • 1/2 cup water, plus more as needed
  • 1 small onion, sliced
  • 4 cloves garlic, minced
  • 1 thumb-size piece ginger, cut into thin strips
  • 1 tablespoon neutral cooking oil
  • 1 to 1 1/2 tablespoons soy sauce
  • 1 teaspoon vinegar
  • 1 long green chili, optional
  • Black pepper to taste
  • Salt and vinegar for soaking the banana blossom

Choose and wash the banana blossom

Pick a blossom that feels firm and heavy, with tightly packed outer bracts. Wash it under running water before trimming so surface dirt does not transfer to the knife. FDA guidance recommends washing produce under running water and does not recommend soap or commercial produce wash.

Banana sap can stain, so use a washable board and wipe the knife promptly. A little cooking oil rubbed on clean hands can make the sticky sap easier to wash away.

Trim, slice and soak it

  1. Peel away the dark, tough outer bracts until the paler tender center remains.
  2. Cut off the hard stem end, halve the heart lengthwise, then slice it thinly across the grain.
  3. Mix a large bowl of water with 1 tablespoon salt and 2 tablespoons vinegar.
  4. Submerge the slices for 15 minutes, then squeeze them gently and rinse once under clean running water.

The soak is mainly for flavor and handling: it reduces some sap and astringency. It does not replace washing clean produce or cooking it thoroughly.

Brown the tofu

Pat the tofu dry so it splatters less. Heat the oil in a wide pan over medium heat and brown the cubes on two or three sides, about 6 to 8 minutes total. Transfer them to a plate. Browning is optional, but it helps the tofu hold its shape in the coconut sauce.

If you prefer a softer dish, skip browning and add the tofu during the final five minutes of simmering.

Cook the coconut sauce

  1. In the same pan, sauté onion for 2 minutes. Add garlic and ginger, then cook for another minute.
  2. Add the drained banana blossom and stir for 3 minutes.
  3. Pour in coconut milk and water. Bring the mixture to a gentle simmer, not a hard boil.
  4. Add soy sauce, black pepper and the optional green chili. Simmer uncovered for 12 to 15 minutes, stirring occasionally.
  5. Return the tofu to the pan. Simmer for 4 to 5 minutes until the blossom is tender and the sauce lightly coats a spoon.
  6. Turn off the heat, stir in 1 teaspoon vinegar, then taste. Add salt only if the soy sauce is not enough.

How to keep coconut milk smooth

Use medium or medium-low heat once the coconut milk is in the pan. A gentle simmer reduces the sauce without making it separate aggressively. Stir from the bottom every few minutes, especially as the sauce thickens.

If the sauce becomes too thick before the blossom is tender, add hot water 2 tablespoons at a time. If it is thin after the vegetable softens, simmer uncovered for a few extra minutes.

Practical substitutions

  • No fresh banana blossom: use a well-drained canned version, rinse it, and shorten the simmer because it is already tender.
  • No tofu: add cooked chickpeas near the end for a different meat-free texture.
  • For more heat: slice the green chili or add a small red chili with the aromatics.
  • For a non-vegetarian version: replace part of the soy sauce with fish sauce, tasting carefully.

Serving ideas

Serve the ginataan hot with steamed rice. A tomato and cucumber salad adds freshness, while calamansi at the table gives each person control over the acidity. For another affordable vegetable-and-protein meal, try ginisang monggo with malunggay.

Food safety and storage

Use a clean knife and board, and wash the banana blossom before cutting. Refrigerate leftover ginataan in a shallow covered container within two hours. USDA guidance recommends using refrigerated leftovers within 3 to 4 days. Reheat only the portion you need until it is steaming throughout, and discard leftovers that were held warm or at room temperature too long.

Coconut sauce thickens when chilled. Add a splash of water during reheating and stir over gentle heat.
