A quick pork miswa soup with tender patola, garlic and fine wheat noodles for an affordable rainy-day meal.
Ingredients
- 250 g ground pork
- 150 g miswa noodles
- 1 medium patola, peeled and sliced
- 1 onion, chopped
- 5 cloves garlic, minced
- 7 cups chicken stock or water
- 2 tablespoons fish sauce
- 1 tablespoon cooking oil
- 1/2 teaspoon black pepper
- Spring onions for serving
How to cook it
- Heat oil in a pot. Cook onion and garlic until softened and aromatic.
- Add ground pork and break it into small pieces. Cook until no pink remains.
- Stir in fish sauce, then pour in the stock. Bring to a boil and skim if needed.
- Lower the heat and simmer for 10 minutes so the pork flavors the broth.
- Add the patola and cook for 3 minutes.
- Add miswa gradually while stirring. Simmer only until the noodles are tender.
- Season with pepper and serve at once with spring onions; miswa continues to absorb broth as it sits.
Kitchen tip: Keep the soup at a gentle simmer after the initial boil. Taste near the end and adjust fish sauce or salt gradually, especially after the broth has reduced.
