Soft mung beans simmered with tomato, pork and malunggay for a filling Filipino soup that tastes even better the next day.

Ingredients

  • 2 cups dried mung beans, rinsed
  • 250 g pork belly or shoulder, diced
  • 1 onion, chopped
  • 5 cloves garlic, minced
  • 2 ripe tomatoes, chopped
  • 8 cups water
  • 2 tablespoons fish sauce
  • 2 cups malunggay leaves
  • 1 tablespoon cooking oil
  • Black pepper to taste

How to cook it

  1. Put mung beans and 6 cups water in a pot. Simmer until the beans are soft and beginning to split.
  2. In a separate pan, heat oil and brown the pork lightly.
  3. Add onion, garlic and tomatoes. Cook until the tomatoes break down.
  4. Stir in fish sauce, then add the pork mixture to the pot of beans.
  5. Pour in more water to reach a soup consistency. Simmer until the pork is tender.
  6. Mash a small portion of the beans against the side of the pot to thicken the broth.
  7. Add malunggay during the final 2 minutes. Season with pepper and additional fish sauce if needed.
Kitchen tip: Keep the soup at a gentle simmer after the initial boil. Taste near the end and adjust fish sauce or salt gradually, especially after the broth has reduced.
