A practical Filipino sweet spaghetti with a meaty tomato sauce, sliced hotdogs and cheese, scaled for an ordinary family meal.

Ingredients

  • 500 g spaghetti
  • 350 g ground pork or beef
  • 6 Filipino-style hotdogs, sliced diagonally
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 700 g tomato sauce
  • 1 cup banana ketchup
  • 1 cup water
  • 2 tablespoons brown sugar, optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons cooking oil
  • 1 cup grated quick-melting cheese

How to cook it

  1. Boil a large pot of water. Cook spaghetti until just tender, then drain. Reserve 1 cup pasta water.
  2. Heat oil in a deep pan. Cook onion and garlic until fragrant.
  3. Add ground meat and break it apart. Cook until no pink remains and excess moisture has evaporated.
  4. Add sliced hotdogs and cook for 2 minutes.
  5. Pour in tomato sauce, banana ketchup and water. Simmer gently for 20 minutes, stirring occasionally.
  6. Taste before adding sugar, salt and pepper. Thin with reserved pasta water if the sauce is too thick.
  7. Spoon sauce over the noodles and finish with grated cheese.
Kitchen tip: Prepare and measure everything before turning on the stove. Taste near the end, adjust seasoning gradually, and serve the noodles as soon as they reach the right texture.
