Pork giniling with sayote stretches ground pork with a mild, juicy vegetable for an economical weekday ulam. Brown the pork thoroughly before adding the sayote, then simmer only until the slices are tender. A small amount of tomato gives the sauce body without making it heavy.

Ingredients

  • 500 grams ground pork
  • 2 medium sayote, peeled and diced
  • 1 tablespoon cooking oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tablespoon fish sauce
  • 1/2 cup water
  • 1 small carrot, diced, optional
  • Ground black pepper
  • Chopped spring onion, optional

Measure and prepare everything before heating the pan. This keeps the cooking sequence steady and prevents garlic, onion or other aromatics from burning while the next ingredient is being cut.

Prepare safely

Wash fresh produce under running water before cutting. The FDA recommends plain running water and advises against using soap or detergent on produce. Use clean utensils and a clean board. Keep raw chicken, pork, fish and their juices away from vegetables that will not be cooked further.

Thaw frozen meat or seafood in the refrigerator, in cold water changed regularly, or in the microwave when it will be cooked immediately. Do not thaw perishable food on the counter. Open canned ingredients only from cans that are not leaking, swollen, badly rusted or deeply dented at the seams.

Prepare the sayote

Wash the sayote before peeling. Cut lengthwise, remove the seed and dice into pieces similar in size to the optional carrot. Peel under running water if the sticky sap bothers your hands.

Keep the cut vegetable separate from the raw pork and use clean utensils when switching between them.

Brown the pork fully

Heat oil in a wide pan over medium heat. Sauté garlic and onion, then add the pork. Break it into small pieces and cook until no pink remains and the meat begins to brown. Drain excess fat carefully if needed.

Ground pork should reach 71°C or 160°F. A thermometer inserted into a compact spoonful gives a more reliable check than colour alone.

Simmer the vegetables

Add tomatoes and optional carrot, cooking until the tomato softens. Stir in sayote, fish sauce, pepper and water. Cover and simmer for 6 to 8 minutes, then uncover until the vegetable is tender and the sauce lightly coats it.

Taste after reduction. For a canned-beef version of the same vegetable, try ginisang sayote with corned beef.

Adjustments and serving ideas

Add green peas at the end or diced potato with the carrot. Lean ground chicken can replace pork, but it must reach 74°C or 165°F and may need a little more oil.

Taste only after ingredients that require cooking are fully done. Add salt, fish sauce or soy sauce gradually because canned products, broth cubes and condiments can already contribute considerable sodium. Serve with freshly cooked rice or the suggested accompaniment while the dish is hot.

Storage and reheating

Transfer leftovers to shallow covered containers and refrigerate within two hours, or within one hour when the surrounding temperature is above 32°C. Use refrigerated leftovers within 3 to 4 days. Reheat only the portion needed until it is steaming hot throughout.

Discard food left out beyond the safe limit. Smell and appearance cannot prove that food is safe. Freeze portions promptly when they will not be eaten within the refrigerator window, label the date, and thaw safely before reheating.

Yield: 5 servings. Prep time: about 15 minutes. Cook time: about 25 minutes.
