Ensaladang Pipino with Tomato and Calamansi
Ensaladang pipino with tomato and calamansi is a crisp Filipino side dish with red onion and a bright sweet-sour vinegar dressing.
Ensaladang pipino with tomato and calamansi is a refreshing no-cook side for grilled or fried dishes. Salt draws water from cucumber, so dress the salad shortly before serving or drain the slices first. Keep it chilled because the cut vegetables will not receive a cooking step.
Ingredients
- 2 medium cucumbers
- 3 ripe tomatoes, cut into wedges
- 1 small red onion, thinly sliced
- 3 tablespoons cane vinegar
- 2 tablespoons calamansi juice
- 1 teaspoon sugar, optional
- 1/4 teaspoon salt, plus more to taste
- Ground black pepper
- Chopped spring onion or cilantro, optional
Measure and prepare everything before heating the pan. This keeps the cooking sequence steady and prevents garlic, onion or other aromatics from burning while the next ingredient is being cut.
Prepare safely
Wash fresh produce under running water before cutting. The FDA recommends plain running water and advises against using soap or detergent on produce. Use clean utensils and a clean board. Keep raw chicken, pork, fish and their juices away from vegetables that will not be cooked further.
Thaw frozen meat or seafood in the refrigerator, in cold water changed regularly, or in the microwave when it will be cooked immediately. Do not thaw perishable food on the counter. Open canned ingredients only from cans that are not leaking, swollen, badly rusted or deeply dented at the seams.
Prepare crisp cucumber
Wash cucumbers and tomatoes under running water. Trim the ends and slice the cucumber into thin rounds or half-moons. Peel only if the skin is tough.
For less liquid, toss the cucumber with a small pinch of salt, rest for 10 minutes and drain. Do not squeeze hard because that damages the crisp texture.
Soften the onion and mix dressing
Soak sliced onion in cold water for 10 minutes for a milder flavour, then drain well. In a clean bowl, stir vinegar, calamansi, sugar, salt and pepper until the sugar dissolves.
Taste the dressing with one cucumber slice. It should be bright but balanced; add sweetness in small amounts rather than masking the acidity.
Assemble close to serving
Combine cucumber, tomato and onion. Pour over only enough dressing to coat, fold gently and chill for 10 minutes. Add herbs just before serving.
Use a clean serving spoon and return the bowl to refrigeration between meals. For a smoky cooked-vegetable salad, try ensaladang talong with salted egg.
Adjustments and serving ideas
Add thin radish slices or diced green mango for crunch. For a less sharp salad, replace one tablespoon of vinegar with cold water; do not rely on reduced acid to preserve the dish.
Taste only after ingredients that require cooking are fully done. Add salt, fish sauce or soy sauce gradually because canned products, broth cubes and condiments can already contribute considerable sodium. Serve with freshly cooked rice or the suggested accompaniment while the dish is hot.
Storage and reheating
Transfer leftovers to shallow covered containers and refrigerate within two hours, or within one hour when the surrounding temperature is above 32°C. Use refrigerated leftovers within 3 to 4 days. Reheat only the portion needed until it is steaming hot throughout.
Discard food left out beyond the safe limit. Smell and appearance cannot prove that food is safe. Freeze portions promptly when they will not be eaten within the refrigerator window, label the date, and thaw safely before reheating.
Yield: 4 side servings. Prep time: about 20 minutes. Cook time: no cooking required.
